I am Amanda Scacchi (pronounced Ska-Key). My husband Tony and I are both in our 20’s and are originally from Summerfield, Florida. We have a toddler named Ava and a cat, Skipper. I am a former high school business teacher, now stay-at-home mom. In 2012, we decided to relocate our family to Anchorage, Alaska and then in 2013, we were transferred to Houston, Texas. A series of events returned us to Florida at the end of 2013. Our moves were driven by the desire for a simpler, better life for our family. As a family, we try to maximize our resources, live simply, and enjoy life to its fullest. We hope you enjoy reading about our life and our adventures!
